A subcategory at its simplest would consist of another column in your
products file which can be used to sort and filter search results, lists,
etc. This means that you need to add the column to you products file,
populate it, then include form elements and variables to your search forms
and one-click searches, and add display tags to you results page(s),
cart(s), receipts and reports, etc.
That is it in a conceptual nutshell. Of course, a specific implementation
could be far more elaborate. What part of this is giving you trouble?
