Removing Simple Same items & Security

Hi I'm a newbie to Minivend - 

I set up the catalogs with the sample Simple template...

Does anyone know how I can edit the title and Artist  fields that show
up in the Edit Product fields?  It has description, title, artist,
comment, etc...?  

I also made changes to the copyright, leftside and rightside files but
my page will still show the original Sample look..  How can i change
this?  Do i need to do it in index.html or config.cfg?

Also I'm using MiniMate...  Does anyone know how I can secure the
/admin/menu.html file so no one else can access it?  Our machine is
running RedHat Linux 6.0
