One tool I have found very helpful is http://www.htmlwizard.net/phpMyAdmin/
(thanks to Scott Benson for that). It won't solve all your problems, but it
makes life a lot easier. Needless to say you need PHP installed.

I started off making an empty database "mysqladmin create new_database"
Then I modified products.asc to have the fields I wanted.
Next I made modifications in catalog.cfg to make MV use MySQL and to modify
certain fields
Then I ./restart-ed the minivend server. During the catalog config, MV made
the table "products" with all the correct fields in the new MySQL database
I created.
