Products.asc and receipt generation

List, has anyone had any experience with altering the products.asc and the
writing of the file concurrent with an order being placed?  At the exact
moment I saved changes to my products.asc (live store) I received an order
that was slightly mutated.  A few products had developed accessories that
they don't usually have.  Other than that, the item codes, qtys, and
possible accessories were correct.

As the store approaches it's 1st birthday and our promotions begin to pay
off our traffic is climbing...  I want to be sure I am administering
minivend correctly.  What is the procedure that the other shop owners use
when updating?  Do you stop the server, save the db, restart the server?
Or am I just freaking out over something simple like a stray gamma ray
striking the memory of this guy's order?
