makecat *is* general purpose.

In your minivend directory create another directory parallel to simple
and populate it with the files and dirs from simple.

Then edit the pages and catalog.cfg in the new directory to match the
style you want for your stores.

Next time you run makecat when it ask you for DemoType give it the
name of your new directory.  You can have as many of these template
directories as you need/want.
