I currently use the manual method.  We have physical pre-printed gift
certificates, as opposed to locking the customers into electronic-only.

I imagine you could create a database of outstanding certificates, each
with an inventory of 1 and a unique (random?) number assigned to each, and
a dollar amount...  Fraud would be your biggest enemy.  Perhaps add a radio
button or checkbox for the credit card field indicating it was a gift
cert...  >shrug<  :-)
