I believe that all you want to do is pass a query term to the next page?
build your link like this:
[sql type=list
query="select distinct varietal from products order by varietal"
][page href="categories" arg="[sql-param varietal]"] [sql-param varietal]
[/page]
[/sql]
That will build a link to a page called categories and pass as an argument
the varietal.
Then on your categories page you do this:
[sql type="list"
query="SELECT ..... Where varietal = [data session arg]"]
[sql-param code] [sql-param title] etc...
[/sql]
It's kinda like doing a specialized search page, but with SQL.
