How to change the email subject field?

I've tried various things, setting mv_order_subject in the checkout
form's order_profile, and even adding a hidden field to set it, to no
avail. Nothing seems to work. Using MV version 3.11.
Can someone give a quick example of how to set the email subject to
something custom, like "a new order" or something?
