You could set it up using US currency, and then use a variable and perl
scripts to show it in the Euro Dollar too.  This way if the value of the
Euro Dollar changed signifigantly compared to that of the US dollar, you
could change the variable and keep both prices stable.
You could then have your basket and check out pages convert totals there
from US to Euro based on the customers needs and total it out.

Trying to keep separate values in the database records of each product, 2
price fields for instance, could be a nightmare if the currency value is not
VERY stable compared to the US dollar.
