Thanks, that was the answer.  The reason I didn't include actual details was
because I never get any response with actual details.  So I figured I could
at least get flamed if I posted something rediculous.

Looking into my crystal ball, it seems to me, you have not set the
UI_ITEM_FIELDS in .../products/variable.txt right, if your products.txt
has not the same structure and fieldnames like the demo catalog.
