[ic] Database Source Files -- Will They Over-write?

I am reviewing documentation at:

This seems to indicate to me that every time the Interchange server is 
restarted, it will cause the information from *.txt files to act as a 
source file and update database information.

Well, that sounds ok for things like product files (maybe), but how does 
that work for a database that is updated by the Admin interface like the 
orders and customers information.  Is the text file update every time the 
database is updated?

If not, it seems as if the text file would have old information (unless it 
was manually updated).  Am I just missing something?
