I think I have it working, at least for my purposes...

I created "Simple Options" using the UI Item Option screen, <This allows me
to force the retrieval order without using o_sort>

Then switched to Matrix, One Widget and used the option editor to edit the
default values, prices, weights, etc. for each option.

Then I switched back to simple mode...

All seems well now.
