It's easy and documented (see the docs under "Catalog.cfg"); you should 
find the following snippet in your catalog.cfg file:

## Whether to NOT encrypt passwords
Variable      MV_NO_CRYPT      1

In the above example, userdb passwords will not be encrypted because the 
variable MV_NO_ENCRYPT is set to true.  Make you catalog.cfg entry look 
like this, then do a catalog reconfig (or restart the minivend server) and 
you are all set.
