Avoid Deleting Items & From: Header

I have a few simple questions (I hope) which I saw touched on in the 
archive, but no answers.

1.  Since I could not get the AuthorizeNet/SSLeay working, I had to 
revert to my old method.  When someone sends an order in 
successfully, they get routed to a final button with hidden 
AuthorizeNet fields to send in directly.  It's a good make-shift 
method, but the problem I always had is if a customer gets their 
credit card declined, AuthorizeNet requires them to go back to enter 
another card or fix the previous input.  After they fix it, when they 
go back to the checkout, their items are flushed out and they have to 
choose them all over again.  How do you prevent the last page (from 
checkout on) from deleting the items?

2.  How do I change the "From:" header in the e-Mails?  They (both) 
read "Minivend <minivend@bodhisattva@nethollywood.net>" which is the 
server, not the virtual domain the cart is located at.
